Raspberry Crumb Coffee Cake


What you need:


Butter
Flour, sugar, salt, baking powder
3 eggs
Vanilla
Sugar
Baking powder
Milk
Cream cheese
Lemon juice and Lemon zest
1 pint berries



Cake Layer: mix in mixer with paddle
Cream:
1 stick plus 2 Tbsp. Unsalted Butter at room temp.
¾ c. Sugar
Add:
2 Eggs, one at a time
1 tsp. Vanilla extract
Combine dry:
1 ¼ c. Flour
½ tsp. Baking Powder
¼ tsp. Salt
Wet:
1/3c. Milk
Alternately add wet and dry to the creamed mixture on the mixer until combined.           

Cream Cheese Filling-Process til smooth
8 oz. Cream Cheese, room temperature
½ c. sugar
¼ tsp. Lemon Zest
1 Tbsp. Lemon Juice
1 Egg Yolk
1 Tbsp. All-Purpose Flour

Crumbs: mix with fingers or pulse in food processor ‘til lumpy
6 Tbsp. Unsalted Butter, room temp.
1 c. Flour
1/3 c. Sugar
----Pour and spread cake into pan----
----Top with berries----
----Cover with Cream cheese mixture----
----Top with more berries----
----Cover with Crumbs & press down gently----
----Prepare a 9” Springform pan or 2 small pans of equal size----
----Buttered and bottom lined with parchment paper----
Bake at 350 degree oven for about an hour
