Tzatziki Sauce-from Mindoverbooty.com

Finally, an easy to make creamy Tzatziki sauce! Thanks to Marisa Pochter and her great recipe for this rocking sauce at Mindoverbooty.com. Check it out, she has it pictured on her blog.



Tzatziki Sauce 
Ingredients:
  • 16 ounces nonfat organic Greek yogurt
  • 2 Tbs. olive oil
  • 2 small persian cucumbers
  • 1/4 cup diced red onion
  • 3 cloves garlic, pressed
  • 1/2 lemon, juice of
  • 2 Tbs. fresh dill, finely chopped
  • sea salt & pepper, to taste
Directions:
Finely chop the cucumbers, onion and garlic. Place in a bowl. Squeeze 1/2 lemon into bowl. Slice up fresh dill and add to the bowl. Pour in the yogurt and olive oil. Stir until combined. Sprinkle sea salt and freshly ground pepper in moderation. Stir and taste. Adjust seasoning to your liking.

Store in an airtight container in the refrigerator for up to 5 days. Use on top of eggs, in place of mayo on sandwiches or on pita bread with veggies for a filling snack.
