Hot Diggity dog, it's corn dog batter

Corn Dogs 

Ingredients:
10 Hot Dogs
1c. flour
2/3 corn meal
2T. sugar
1 1/2 tsp. B. powder
1tsp. salt
2T. shortening
1egg-beaten
3/4 milk oil for frying
10 wooden skewers

Mix dry together and cut in shortening until it resembles fine crumbs.
Combine milk and egg in small bowl then add to dry. Pat hot dogs dry, dip in batter with tongs, coating all sides. Let excess drip off.
Drop into mini fryer until golden brown.

Corn Dogs #2 

8 Hot dogs
2/3c. cornmeal
1/3c. flour--plus extra flour for dredging.
1egg beaten
2T. veg oil
1t. salt
1/2c. milk

Mix dry ingredients, add milk, egg, and oil.
Dip hot dog in flour, coat with cornmeal mixture. Deep fry at 375 till golden brown

Shower menu for the masses

After getting a Baby shower catering request for someone on a tight budget, I came up with a simple menu. In less than 24 hours I shopped and prepared the food with the help the night before from 2 great helpers.
Shower 3/10 Menu:
Artichoke dip-warm
Artichokes
Cheese Cream Cheese
Half n Half
Crock pot or dish with warmer
Served with sliced bread—from a local sandwich place..or other suggestion

Hummus-store bought/local restaurant-
Corn chips

Grilled Shrimp skewers—
spice and lemon juice marinade
10#-cleaned-deveined shrimp. Not cooked.
Skewers—
Zip lock to marinate overnight
Plate warmer or platter—

Cobb Salad—on 2 platters or topping in small containers and lettuces and spinach in big bowl Lettuces-whatever is available
Spinach-chopped
Avocado-sliced
Mushrooms-sliced
Tomato-chopped
Carrots-shredded
Red onion-thin slice
Cucumbers-seeded, sliced
Hard boiled eggs-sliced-(bring egg slicer)
Turkey-rolled and sliced
Chicken breast-broiled and chopped
Bacon-chopped
Garbanzo beans-soaked in pesto and sun dried tomatoes

Cakes/desserts-from Gayles or other local bakery
Key lime pie, Opera torte, Princess Cake, Trifle- Cookies- chocolate bundles

Lasagna-2 pans (normal home size pans)
Spinach and sun dried tomato
Sausage and green pepper
2 lasagna pans
Ricotta
Mozzarella
Parmesan
Lasagna noodles
Sauce
Spinach
Sun dried tomatoes
Sausage
Green Pepper

Green Goddess Salad dressing

Pretty easy use for leafy greens. Use other greens like cilantro and red rain lettuce.
It's an easy recipe to make substitutions.

Green Goddess Salad Dressing
process in blender:
1c. Canola(or your own tasty oil)
3Tbsp. Cider Vinegar or lemon juice
2 tsp. mild Honey
1/4c fresh Spinach leaves(use more for a thicker dressing)
1/4c. Basil leaves
2 tsp. Dijon mustard(or your own favorite mustard)
1/4 tsp Salt
pinch Pepper
1c milk or buttermilk

Easy easy quick biscuits.

CatHead Biscuits
makes 6 biscuits
1 1/2 cups flour
1 1/2 cups cake flour
1 tablespoon baking powder
1/2 tsp baking soda
1 tsp salt
8 tablespoons (1 stick) butter cut into 1/2 inch pieces and softened
4 tablespoons shortening cut into 1/2 inch pieces
1 1/4 cups buttermilk (sub 1 tablespoon lemon juice into 1 1/4 cups milk, let sit 10 minutes)
Preheat oven to 425. Grease 9 inch cake pan. Combine flours, bp,bs, and salt. Rub in butter and shortening,til mixture resembles coarse meal.
Using a 1/2 cup measure or spring loaded ice cream scoop, transfer 6 heaping portions of dough into prepared pan. Placing 5 around the pan and 1 in the center.
Bake until golden and puffed,20-25 minutes. Cool in pan 10 minutes, then transfer to wire rack. Serve.
